This weekends fire pit cooking- chicken (free range) with za’atar seasoning (absolutely beautiful, available from Oxfam stores or off their site), a home grown fennel, sweet potato, white potato, carrots and another damper. This one was made from garlic, onion and cheese. Want a rough recipe?
Mix one teaspoon yeast with a little sugar and about one cup of warm water, allow to activate. While its doing that peel and dice onion and peel a bulb of garlic. The onion and garlic can then be roasted in a hot oven or cooked on the fire. If you are fire cooking please double wrap in aluminium foil, and observe all other fire safety.
Retrieve the yeast bowl and add flour and lupin flour bit by bit until you form a dough, mixing all the while with spoon or hands. Add about two tablespoons each of both flax seeds and chia seeds, then mix through the onion and garlic. You my now need some more flour to soak up all those yummy garlic and onion juices! Make the dough into a flat, round loaf that is filled with cheese, and put cheese on top. I prefer the non rennet-sourced from cows kind.
Double wrap in aluminium foil and place into the area of the fire that isn’t actively burning. I have had a damper double or triple in size before its cooked, so it is rather a guessing game to see when it’s cooked. You may need to take it out and check it a few times. So finally you will be left with a golden brown puffy loaf, serve with butter as you wish!
So there you have it, a damper filled with seeds and lupin flour, as well as lovely healing and immunity boosting garlic, “super foods” as its now trendy to call it!
